With the encouragement of co-worker and CrossFit coach Meredith Davis, 18 Cannon School educators in Concord, North Carolina, started training at CrossFit Vitality. In this nine-part series, these teachers and administrators go through CrossFit fundamentals and try to determine the cognitive impact of the program.

After three months of CrossFit, 11 out of 18 original members remain consistent with the program. Coach Steve Pinkerton estimates six or seven are committed to the Paleo challenge as well.

And they’re getting results.

“They’re finding that their bodies are changing,” Davis says. “They’re getting push-ups now. One girl just realized that she’s faster at running.”

One teacher is hardly recognizable. She’s lost 8 lb. and says her increased fitness is carrying over into the classroom, where she works with 4- and 5-year-olds who need high-energy supervision.

By improving their fitness, these teachers are becoming positive role models for their impressionable students.

“They’re setting the example,” Davis says. “Developing that (fitness) habit at a young age, it’ll stick with them all through school.”

Jacob Marinez has wanted to be a firefighter in Phoenix, Arizona, for as long as he can remember. He worked hard in school, got a college education and started CrossFit to ensure he was physically ready for the challenges of the job.

“My goal after high school was to go to college, get my degree and get on the fire department,” says Marinez, whose father, uncle and cousin have served as firefighters in Phoenix. “It’s an extended part of my family.”

Marinez, 23, is still working toward his dream job.

Throughout his life, Marinez has had one big obstacle: living with Tourette syndrome, a neurological disorder that causes involuntary movements or “tics” of the face, arms or limbs.

Once embarrassed by his twitches, Marinez has learned to control them with the help of CrossFit and good nutrition. A member of Urban WarFit CrossFit, he’s found a place where he feels comfortable.

“The moment that kid grabs a bar or a pull-up bar or that ‘3-2-1 … go!’ hits, it’s like all of a sudden, this technical machine comes out,” says Rob Pyfer, owner of Urban WarFit CrossFit. “And he’s methodical, and he moves through it, and he just has a really good understanding of how to wrap his brain around whatever that set work is in front of him.”

Through the confidence he’s gained from CrossFit, Marinez has started to compete, using his twitching to help him prepare.

“I kind of use it as my strength,” he says. “You’ll definitely see (the twitching), and I challenge all of you people watching this, if you see me out there competing, notice what I’m doing when I’m warming up—things I do with my neck and with my shoulders. I’ll twitch, and that’s that Tourette’s coming out.”

He adds: “Now it’s kind of like my way of getting ready for a workout. It’s my drive.”

The problem with these electric battery powered lawnmowers is the price of a new battery pack. The one on this works electric lawnmower is about $250. I found two batteries that were about $30 apiece so I hooked them up and it just fine. Not as convenient but since I have the batteries I might as well use them to cut the grass with. Are used an old car battery last year it was half the voltage but it did the job. The car battery died so now I have full strength on the lawnmower again.

PHEWF! This was a MISSION. We LOVE filming our food/recipes in What We Eat in a Day videos but this week gave us so much trouble. First, the Minimal Millennials snagged our camera charger and brought it across the border to the States... leaving us with a dead camera after breakfast. So the next day (with a new charger) we made lunch and dinner only to find out that our dinner footage was DELETED during import. CLASSIC!

Anywho, we hope you enjoy this hectic video as much as we enjoyed (*shifty eyes*) editing it.

We travel a lot and at times being vegan on the road means less eating out and more cooking for ourselves. It's a good thing we love whipping up vegan creations... now if only we could hire a maid to do our dishes lol. Many of you have requested more vegan vanlife recipes so here goes nothing...

Eamon and I have been vegan for over a year now (vegetarian for a few before) and it was and continues to be the best decision we've ever made. Not only do we feel better, lighter, and more full of energy but we also live a lifestyle that we know contributes less to the endless suffering of innocent animals and to the destruction of our planet.

Yields 4 pancakes

1 1/4 Cup All Purpose Flour (We used half oat flour)
2 Tablespoons Sugar
2 Teaspoons Baking Powder
1/2 Teaspoon Salt
1 1/4 Cup Almond Milk
1 Tablespoon Oil (Olive or Coconut)

Lunch:

♥Avocado on Whole Wheat Toast Sprinkled with Chili Flakes and Freshly Squeezed Lemon

Dinner:

♥Jackfruit Tacos

Main
* 1-3 tbsp of cold pressed coconut oil
* 3 cans of (each can approx. 20 oz/566 grams) young green jackfruit in water  (It should be white on the inside not yellow)
* 1 onion, sliced thin
* 2 garlic cloves, minced
* BBQ sauce (homemade or store bought – double check that it doesn’t have anchovies or Worcestershire or gluten)
* Chef’s choice -small corn tortillas, small soft taco (gluten-free), boston lettuce, romaine lettuce
*Sometimes the cans of jackfruit are poorly packaged and have less, so we recommend buying extra. *
Spices- you can freestyle this section depending on your preferences but we recommend:
* 2 tsp paprika
* 2 tsp ground cumin
* 2 tsp garlic powder
* ½ tsp chili powder
* salt and pepper to taste
You basically want to add enough sauce so that everything is coated evenly and a lil saucy, you can’t really add too much sauce, so don’t be scared. I’d buy 3 bottles to be safe.
Toppings (Optional) 
1. Cashew Crème
2. Fresh, rinsed cilantro
3. Slaw (Ingredients below) * 2 green onions, finely chopped * 2/3 cup dairy-free mayo * 1 tsp black pepper * 1 tsp celery salt * 3 tbsp coconut sugar (or whatever sugar you have) * 2 tbsp apple cider vinegar * 1 Lb well rinsed thin-sliced Package of Cabbage Mix or make your own by thinly slicing purple and green cabbage and carrots
*Mayo – We use Veganaise (sold at Whole Foods or Goodness Me for soy-free).  The exact amount will depend on how much slaw you are making, we recommend adding it slowly as you mix so it’s not too saucy.
